Crusted Honey Mustard Chicken

I might have a new favorite EASY chicken dish right here. I pinned this a while back and finally got around to making it last week. It is a Weight Watchers recipe that is DELISH and super easy!!

Crusted Honey Mustard Chicken

Cooking Spray

2/3 cup light honey mustard dressing

1/8 tsp salt

1/8 tsp black pepper

2 tsp dill, freshly chopped

1 medium scallion, finely sliced

1 cup cornflake crumbs

4 boneless skinless chicken breasts (I halved this recipe)

Preheat oven to 425 and coat a shallow pan with cooking spray. In a small bowl, combine honey mustard dressing, salt, pepper, dill and scallions.

Remove 1/3 cup and set aside.
Place cornflake crumbs in a shallow bowl. Dip chicken in dressing mixture and then cornflake crumbs. Place in prepared pan. Bake until chicken is golden and no longer pink in center. The recipe said to bake for 15 minutes which was NOT ENOUGH time...I baked for 30 minutes.

Drizzle remaining mixture over chicken breasts and serve.

This really is SO GOOD! The chicken is really moist on the inside, but the topping is crispy and the sauce is fantastic! Enjoy! :)
